Cassava flour is pretty much the perfect flour for people following a gluten-free or paleo diet. It replaces wheat flour 1 to 1 in most recipes, and has a neutral taste, lots of fibre, and a fine texture that helps dough hold together and prevents grainy, gritty breads and cakes. AKN’s cassava flour is prepared from organically grown cassava tubers which are shredded, blended and filtered before being dried in a completely chemical-free process.
