Cassava flour is pretty much the perfect flour for people following a gluten-free or paleo diet. It replaces wheat flour 1 to 1 in most recipes, and has a neutral taste, lots of fibre, and a fine texture that helps dough hold together and prevents grainy, gritty breads and cakes.
